WineMaker Night with Master Farmer Steve Collum

Pauline's is thrilled to announce that our Wine Bar will be hosting a very special tasting event not just for one night but three. Beginning Thursday, March 17th (and last through Saturday, March 19th) we will be pouring limited edition wines featuring Sangiovese grapes grown by gold medalist Steve Collum in Calaveras County.

The wines available for pouring are 2007 and 2008 bottles from Zucca Mountain Vineyards and 2009 and 2010 barrel samples from Calaveras Creek Winery (the winery that produces Pauline's Pizza Red and their eponymous label).

The '07 and '08 Zucca won a silver medal at both the Calaveras County and California State Fairs. The grapes used were produced in small quantities in order to promote the color and intensity of the wine. This Chianti style Sangiovese speaks of cranberry, pomegranate, and hard candy. In the mouth it is full with both fruit tannins in the mid-palate and a long smooth finish.

The Calaveras Creek Winery ' 09 and '10 Sangiovese is similar to Zucca's Chianti style Sangiovese but manages a deeper more intense color with hints of currant, raspberries, blackberries, and cinnamon. This is a bold and earthy wine that directly reflects the California sun-baked land it originates from.

On Saturday, March 19th the farmer who grew the Sangiovese grapes used by both Zucca and Calaveras Creek, Steve Collum will be pouring and waxing poetic about the growing process and the beauty of this Italian varietal. Mr Collum has managed vineyards, studied viticulture extensively, and installed vineyards around the world. In addition he harbors a deep affinity for the romantic origins and history of Sangiovese which only supports the idea that Mr Collum is guru of California Sangiovese.

Artisan Cheese Plate - goat cheddar, petit basque, verde capra, and fresh fruit with French plum jam, pecans and quince paste. $8.5

Confit of Chicken Thigh topped with rosemary, garlic, and juniper berries and served on a bed of fingerling potatoes and balsamic onions. $9.5

Braised 'n' Pulled Goat & Lamb with star anise, cinnamon, red wine, and mirpoix served on polenta. $9.5

We've had such great success with tomatoes and chilies at our Star Canyon Ranch, we decided to try our hand at organic grapes!

In 1997, we put in our first plantings of Zinfandel and Syrah grapes, and over the next several years added additional varieties and honed the techniques of crushing and fermenting. We were lucky to have as advisors some of our favorite winemakers, including Doug Nalle, whose Zinfandel is a long-standing favorite at Pauline's.

VCalifornia statute requires that all wines produced be made from juices of grapevines at least four years old, and in 2001, our vines were of "legal age" and we became a bonded winery. We grow six varieties on 15 acres spread over a South-facing hillside sloping from 1,000 to 1,500 feet. Hot summer days and cool nights favor the development of rich, complex sugars in the grape varieties we have chosen to cultivate. 2006 saw our best harvest yet with well-controlled yields (about 20 tons) and great quality amongst varieties.

This picture of our vineyards shows plantings of all six varietes we grow: Zinfandel, Merlot, Syrah, Mourvedre, Grenache, Viogneir, Tannat, and Cabernet Franc. Many of our wines are blends of these varieties. We also provide our organically grown grapes for the use of neighboring wineries, and in 2007, both Lavender Ridge Vineyards and Hatcher Winery won Gold medals for their 2005 Mourvedres in the professional division at the Calaveras County Fair wine tasting.

We price our wines reasonably and always offer two choices by the glass as well as half bottles (375 mL) of select varieties. Cases of our wines are available at a 10% discount.

Pauline's Wines offer a number of reasonable and delicious wines grown, produced, and bottled from our hillside, certified organic, estate-grown grapes. Our varietals include Zinfandel, Merlot, amd Cabernet Franc in addition to our Rhone Varietal which consists of Mourvedre, Grenache, 3 clones of Syrah, Viogneir and Tannat.

Right now we are pouring all of the above and also a number of other wines from California, France, Italy, Argentina, New Zealand and Australia.
